1. Breakfast Bowls – Weight Watchers Freestyle

Ingredients
- 1 1/2 lbs. potatoes, peeled and cut into small cubes
- 1/2 onion, chopped
- 1/2 red pepper, chopped
- 1/2 orange pepper, chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon extra virgin olive oil
- 12 eggs
- 6 tablespoons reduced-fat Mexican cheese
- 6 containers with lids
Instructions
Add oil to a skillet and set heat to medium.
Once the oil is warm add the potatoes, onions and peppers. Also add the garlic powder, salt and pepper. Cover and cook 10 minutes, stirring occasionally.
While the potatoes cook, add the eggs to a mixing bowl. Whisk the eggs until scrambled.
Add a little bit of non-stick cooking spray to a frying pan and cook the scrambled eggs.
Spread out the six containers and fill them with the potatoes, eggs and cheese. Make sure you divide the mixture evenly.
Store the breakfast bowls in the fridge. When you’re ready to eat one place it in the microwave 30-45 seconds.
2. BISCUITS AND GRAVY – WEIGHT WATCHERS
Breakfast is one of my most favorite meals of the day. I love bacon, eggs, hash browns, biscuits, and gravy…you name it. I know biscuits and gravy is a Southern menu item and I live in the North. Whenever I go to a restaurant for breakfast, I’ll always look to see if there is biscuits and gravy on the menu and I’ll order that. This biscuits and gravy recipe is so good. The biscuits were made with 2 ingredient dough and the recipe made about 8 biscuits. If you don’t like your biscuits really tiny and thin, then just roll them out thicker. Please note, the points value will be different then. Just use your recipe builder to figure out points.
INGREDIENTS
For the Gravy:
- 2 tablespoons of light butter or margarine
- 9 oz Jimmy Dean Turkey Sausage Crumbles (already cooked)
- 3 tablespoons of flour
- 2 cups of milk (I used unsweetened almond milk)
- 1 tsp of black pepper
- 1 tsp of onion powder
For the Biscuits:
- 1 cup of non fat plain greek yogurt
- 1 cup of self rising flour
INSTRUCTIONS
- In a bowl, mix the flour and greek yogurt together until a ball of dough forms. Place the dough onto a floured workspace on your countertop and need the dough. Using a biscuit cutter, cut out 8 equal biscuits and place them on a sheet pan. Bake at 400 degrees for 15 to 20 minutes or until the tops are golden brown.
- While the biscuits are baking in the oven, make the gravy. In a medium nonstick skillet, melt the butter. Add the already cooked sausage to the pan and stir until the sausage is warmed up. Add in the flour and whisk for 1 to 2 minutes or until the flour has completely dissolved. Next, add the 2 cups of milk and bring to a simmer and add the spices. The sauce will be ready when you can run your finger along the back of the spoon and it leaves a clear lining.
3. SAUSAGE AND EGG BREAKFAST BOWLS
Sausage and Egg Breakfast Bowls – this yummy breakfast bowl has crispy hash browns, eggs, turkey sausage, and cheese and will keep you full all morning long!
INGREDIENTS
- 1 cup of Southern Style Hash Browns (frozen)
- 2 large eggs
- 1 oz of Turkey Sausage Crumbles
- 2 tablespoons of Tostitos Medium Con Queso Cheese Sauce
INSTRUCTIONS
- Place 1 cup of the hash browns in your air fryer and cook them at 400 degrees for 11 minutes. If you don’t have an air fryer follow the back of the package for instructions on how to cook them.
- While your hash browns are cooking, whisk two large eggs and bowl and add the 1 oz of turkey sausage. Cook them on medium high heat inside a medium sized pan.
- Top the hash browns off with the eggs and 2 tablespoons of cheese sauce.
4. Sausage and Cheese Biscuits
These Sausage and Cheese Biscuits are made with only a few simple ingredients and simple to make. No yeast, No kneading, nothing! These can be made in just 15 minutes! They make a fantastic side dish to any meal!
INGREDIENTS:
- 1 cup self-rising flour ( I use Gold Medal brand)
- 3/4 cup plain nonfat Greek yogurt ( I use Fage or Trader Joe’s)
- 2 eggs, divided
- 3/4 cup Jimmy Dean fully cooked turkey sausage crumbles
- 1/2 cup light cheese ( I use Trader Joe’s lite 3 cheese blend or Velveeta Shreds)
DIRECTIONS:
- Preheat oven to 400° degrees.
- In a mixing bowl, combine flour and Greek yogurt. Stir until combined.
- Using a spatula stir in 1 whole egg and mix until all ingredients have been incorporated.
- Fold in sausage crumbles and cheese.
- Using a spoon, scoop dough and drop dough on a baking sheet lined with parchment paper. Repeat steps until 12 biscuits are formed.
- In a small bowl, beat one whole egg with 1 Tbsp water to make egg wash. Using a basting brush, brush the tops of the biscuits with egg wash. The egg wash helps make the tops of the biscuits lightly brown.
- Cook for 15-18 minutes or until biscuits are lightly brown.
