- 1 cup flour
- 1 cup cornmeal
- 1/4 cup sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/3 cup butter melted
- 1 cup buttermilk
Instructions
- Preheat oven to 350 degrees.
- Whisk together flour, cornmeal, sugar, baking powder and salt.
- In a separate bowl, whisk together egg, buttermilk and melted butter.
- Combine the wet and dry ingredients just until mixed.
- Spread into a greased 8x8 pan and bake 30-35 minutes or until a toothpick comes out clean.
Recipe Notes
- Optional: Add 1 cup corn kernels to the batter before baking.

Jiffy Corn Muffin Mix is a wonderful treat. Cornbread is a delicious side at any meal. If you're from the South, it's on the table at most meals. It's that good. But, I've made it plenty of times when it turns out dry and crumbly. There's nothing worse than spending time baking cornbread only to have it turn out dry. This recipe solves that. You'll have the most moist Jiffy Cornbread around.
Ingredients
- 2 - 8.5 oz. boxes Jiffy Corn Muffin Mix
- 2 eggs
- 2/3 cup milk
- 1 cup sour cream
- 1/2 cup vegetable oil
- 2 Tbsp. sugar (optional)
Instructions
- Preheat oven to 400-degrees.
- Add the Jiffy Corn Muffin Mixes to a large bowl.
- Add the eggs, milk, sour cream, vegetable oil, and sugar.
- Mix all of the ingredients together.
- Pour into a greased 9" x 9" casserole dish.
- Bake for 25-30 minutes, or until cake tester comes out clean.

- 4 eggs yolks and whites separated
- 1 cup milk
- 1 tsp. vanilla extract
- 3/4 cup butter, melted I use salted}
- 1 cup cornmeal
- 2 cups all-purpose flour
- 1-1/2 cups granulated sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
Instructions
- Preheat oven to 350ºF.
- In a medium-size bowl, combine egg yolks, milk, vanilla, and melted butter and stir.
- Add the cornmeal, flour, sugar, baking powder, and salt. Stir until fully combined, but do not over mix.
- In a separate bowl, beat the egg whites until stiff peaks form. Carefully fold them into the batter.

- 1 Betty Crocker yellow cake mix*
- 1 cup water
- ½ cup vegetable oil
- 2 boxes Jiffy Corn Muffin Mix
- ⅔ cup milk
- 5 eggs
Instructions
- Preheat the oven to 350.
- Prepare a 9×13 pan with baking spray or oil. You can also use 2- 8×8 or 9×9 pans. (If you use a glass pan you will probably cook the entire 35 minutes, in a dark/non-stick pan start checking around 27-30 minutes.)
- Mix all ingredients by hand, just until combined. Pour mixture into the prepared 9×13 pan.
- Bake for 30-35 minutes until the top is golden and a toothpick inserted into the center comes out clean.
